University Town Center adds a wave of new restaurants

University Town Center is expanding its dining lineup in a big way. Award-winning Tampa chef Chris Ponte is bringing two concepts to North Cattlemen Road: Olivia, a modern Italian restaurant named after his daughter, and On Swann, a contemporary American spot that earned a Michelin Guide recommendation at its original Tampa location. Both are slated to open in 2026, sitting right next to each other in UTC's West District. They won't be alone — Bulla Gastrobar is bringing its Spanish tapas to the area near Ethan Allen, and Blu Kouzina, the Greek restaurant that got its start on St. Armands Circle, is relocating next to Ford's Garage. Add in Zōtō, a Japanese izakaya serving sushi and craft cocktails, and UTC is shaping up to be one of the region's biggest dining destinations by the time everything opens.
